Description

This 15 Minute Garlic Shrimp Zoodles recipe is a quick and healthy dinner with tender shrimp, fresh zucchini noodles, and a zesty lemon-garlic sauce. It’s low-carb, light, and full of vibrant flavors.


Ingredients

2 medium zucchini

3/4 pounds medium shrimp, peeled & deveined

1 tablespoon olive oil

Juice and zest of 1 lemon

34 cloves garlic, minced

Red pepper flakes (optional)

Salt & pepper to taste

Chopped fresh parsley


Instructions

  1. Spiralize the zucchini on the medium setting and set aside.
  2. In a skillet, heat the olive oil and lemon juice & zest over medium heat.
  3. Once the pan is warm, add the shrimp and cook for one minute per side, until just cooked through.
  4. Add the garlic and red pepper flakes (if using) to the skillet. Cook for an additional minute, stirring frequently.
  5. Toss in the zucchini noodles and stir constantly for 2-3 minutes, or until they are slightly cooked and warmed through.
  6. Season with salt and pepper to taste and sprinkle with chopped parsley.
  7. Serve immediately and enjoy!

Notes

  • For a more filling meal, add grilled chicken or scallops.
  • For extra spice, increase the amount of red pepper flakes or add cayenne pepper.
  • For a creamier sauce, stir in heavy cream or cream cheese while cooking the shrimp.
