Description

Delicious and healthy 3-ingredient cookies made with ripe bananas and gluten-free rolled oats, perfect for a quick snack or breakfast. These cookies are easy to customize with optional add-ins like nuts, dark chocolate chips, and dried fruits, baked or air-fried to golden perfection.

Ingredients

Main Ingredients

  • 2 ripe bananas (medium to large, mashed)
  • 1 cup gluten-free rolled oats
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • Pinch of salt

Optional Add-ins

  • ¼ cup chopped nuts (e.g., walnuts, almonds)
  • ¼ cup dark chocolate chips (sugar-free for a no-sugar version)
  • ¼ cup dried fruits (e.g., raisins, cranberries)
  • 1 tablespoon chia seeds or flaxseeds for extra fiber

Instructions

  1. Mash Bananas: Peel and mash the bananas in a large bowl using a fork or potato masher until you reach a smooth consistency.
  2. Mix Dry Ingredients: Add the gluten-free rolled oats, vanilla extract, cinnamon, and a pinch of salt to the mashed bananas. Stir well until fully combined.
  3. Add Optional Ingredients: If desired, gently fold in nuts, dark chocolate chips, dried fruits, chia seeds, or flaxseeds to add texture and flavor.
  4. Shape Cookies: Use a tablespoon or cookie scoop to portion the dough onto a baking sheet lined with parchment paper. Flatten each scoop slightly with the back of a spoon to form cookie shapes.
  5. Oven Baking: Preheat the oven to 350°F (175°C). Bake the cookies for 12–15 minutes, or until the edges turn golden brown. Remove and cool before serving.
  6. Air Frying (Alternative): Preheat the air fryer to 325°F (165°C). Place the cookies inside and cook for 8–10 minutes, checking for doneness starting around 8 minutes. Allow to cool before enjoying.

Notes

  • Make sure bananas are ripe for natural sweetness and better binding.
  • Gluten-free rolled oats make this recipe suitable for gluten-sensitive individuals.
  • Optional add-ins can be customized or omitted based on dietary preferences.
  • Chilling the dough before baking can help cookies hold their shape better.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
