Ingredients
1 pound boneless, skinless chicken breasts, cut into 1½-inch pieces (approximately 2 chicken breasts)
½ cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon salt
2 large eggs, beaten
2 cups panko breading
1 cup buffalo sauce
Instructions
Preheat and Prepare:
Preheat your air fryer to 400°F and spray the basket with nonstick cooking spray.
Prepare the Coatings:
Set out three separate bowls.
In the first bowl, combine flour, cornstarch, and salt.
In the second bowl, add the beaten eggs.
In the third bowl, add the panko breading.
Dredge the Chicken:
Dredge each chicken piece first in the flour mixture, then dip it into the eggs, and finally coat it in the panko breading. Make sure the chicken is well-coated in each step.
Air Fry the Chicken:
Place the breaded chicken in a single layer in the air fryer basket. (If your air fryer is small, work in batches to avoid overcrowding.)
Air fry the chicken at 400°F for 8 minutes, flipping halfway through. The chicken should be golden brown and the internal temperature should reach 165°F.
Toss in Buffalo Sauce:
Once the chicken is cooked, transfer it to a large bowl and pour the buffalo sauce over it. Gently toss the chicken pieces to coat evenly.
Optional Crisping:
For an extra crispy finish, place the buffalo-coated chicken back in the air fryer for an additional 3-4 minutes at 400°F.

Notes
If you prefer a milder flavor, adjust the amount of buffalo sauce to your taste. You can also use a combination of buffalo sauce and melted butter for a more balanced taste.
To make the chicken even crispier, you can spray a little extra nonstick spray on top of the chicken before air frying.
Leftover chicken can be stored in an airtight container in the fridge for up to 3 days. Reheat in the air fryer to maintain crispiness.
