Description

Individual, crispy-edged lasagna “cups” made in an air fryer—layers of ricotta, marinara, noodles, and melted cheese baked into handheld frittata-style bites ideal for dinner or meal prep.


Ingredients

4 cooked lasagna noodles (about 2 sheets), cut into thirds

1 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 cup marinara sauce

1 large egg

1/2 teaspoon Italian seasoning

Salt and pepper to taste

Cooking spray or olive oil, for greasing


Instructions

Preheat air fryer to 360 °F (≈180 °C). Lightly grease a six‑cup silicone muffin pan or mini oven-safe ramekins.

In a bowl, whisk together ricotta, egg, Italian seasoning, salt, and pepper until smooth.

Spoon about 1 tablespoon marinara sauce into each greased cup.

Coil trimmed strips of noodle into cups, pressing against sides to form mini bowls.

Fill each noodle shell with the ricotta‑egg mixture, then top with shredded mozzarella and a sprinkle of Parmesan.

Air fry at 360 °F for 10–12 minutes, until the edges are crisp, cheese is melted, and bottoms are golden.

Let cool for a few minutes before carefully unmolding.

Serve with extra marinara sparingly drizzled or for dipping.
