This cozy Beef Noodle Soup recipe is the ultimate comfort food, made with tender beef, hearty vegetables, and egg noodles in a flavorful broth. A one-pot meal perfect for chilly nights and family dinners!
Ingredients
2 lb beef roast, cut into 1-inch cubes
Kosher salt and pepper, to taste
2 tsp Italian seasoning
1 tsp cayenne pepper
2 tbsp olive oil
3–4 cloves garlic, minced
1 lb button mushrooms, sliced
1 large onion, diced
2 large carrots, chopped
3 ribs celery, chopped
2 tbsp balsamic vinegar
10 cups beef broth
12 oz egg noodles or egg-free ribbons
Optional: freshly chopped parsley, to garnish
Instructions
Season beef cubes with salt, pepper, Italian seasoning, and cayenne pepper.
Heat olive oil in a soup pot over medium heat. Sear beef in 2 batches until golden on all sides. Remove and set aside.
In the same pot, sauté garlic and mushrooms for 5 minutes. Add onion, carrots, and celery; cook for another 5 minutes.
Return beef to the pot. Add balsamic vinegar and beef broth. Bring to a boil, then reduce heat and simmer for 1 hour, until beef is tender.
Add noodles and cook for 6–8 minutes. Remove from heat.
Let soup rest until warm. Serve with parsley garnish, if desired.
Notes
Storage (Fridge): Store in an airtight container up to 4 days. Reheat on stovetop or microwave.
Storage (Freezer): Freeze up to 4–6 months (without noodles). Add fresh noodles when reheating.
Best to undercook noodles slightly as they absorb liquid after cooking.
