Ingredients
6 cups baby spinach
1 cup strawberries, hulled and sliced
1/2 cup blackberries (or mixed berries)
1/2 cup pecans, toasted
1/3 cup feta cheese, crumbled
1/2 cup balsamic vinegar
1 tablespoon honey or brown sugar
Instructions
- Preheat oven to 350°F (175°C). Toast pecans on a baking sheet for 5–10 minutes until fragrant, then set aside.
- In a small saucepan, combine balsamic vinegar and honey or brown sugar. Simmer over medium heat until reduced by half and thickened. Let cool.
- In a large bowl, add baby spinach, strawberries, and blackberries.
- Top with crumbled feta and toasted pecans.
- Drizzle balsamic glaze over the salad and gently toss just before serving.
