This simple and delicious Butter Sage Sauce recipe features crispy pan-fried gnocchi combined with tender baby broccoli, all tossed in a rich brown butter and fragrant sage sauce. Perfect for a quick and elegant meal in just 25 minutes.


Ingredients

Gnocchi

  • 1 lb gnocchi

Vegetables

  • 2 bunches baby broccoli

Sauce

  • 3 tbsp butter
  • 6 large sage leaves, minced
  • 2 tbsp olive oil (plus extra for frying)


Instructions

  1. Heat the pan: Heat a large sauté pan over medium-low to medium heat (around 4 out of 10 on an electric stove). Add about 2 tablespoons of olive oil and allow it to warm through for 1-2 minutes.
  2. Cook the gnocchi: Add the gnocchi to the pan in batches to avoid overcrowding. Do not stir immediately; let the bottom side crisp and brown, which takes 5-10 minutes depending on heat and pan crowding. Flip and stir the gnocchi 2-3 times until browned on multiple sides, adding more olive oil if needed. Remove the gnocchi from the pan once browned.
  3. Sauté the baby broccoli: Add a couple more tablespoons of olive oil to the same pan, then add the baby broccoli with a pinch of salt. Stir occasionally and cook for 5-7 minutes until tender but still vibrant. Remove the broccoli from the pan.
  4. Make the sage brown butter sauce: Add the butter to the pan and stir occasionally until it starts to brown, taking care not to burn it. Add the minced sage leaves and cook for another 1-2 minutes to infuse the butter with sage flavor.
  5. Combine and serve: Return the gnocchi and baby broccoli to the pan. Toss everything in the brown butter sage sauce to coat evenly. Season with salt to taste, remove from heat, and serve immediately.

  • Do not overcrowd the pan when frying gnocchi to ensure even browning and crispiness.
  • Keep an eye on the butter as it browns quickly; it should be golden brown but not burnt.
