Noodles

  • 2-3 packets brown rice ramen noodles

  • 2 small or 1 medium zucchini, grated
  • 1/4 cup low sodium soy sauce
  • 1/2 cup fresh basil, roughly chopped

Instructions

  1. Cook the noodles: Bring a large pot of water to a boil. Add the brown rice ramen noodles and cook according to the package directions, usually about 3-4 minutes, until tender. Drain the noodles and set aside.
  2. Sauté garlic and ginger: While the noodles are cooking, heat a large skillet over medium-high heat. Add the salted butter and minced garlic. Cook, stirring frequently, until the garlic becomes golden and caramelized, about 2-3 minutes. Stir in the grated ginger and cook for an additional minute to release its aroma.
  3. Cook the zucchini: Add the grated zucchini to the skillet with the butter, garlic, and ginger. Cook for 2-3 minutes, stirring occasionally, until the zucchini softens and wilts into the butter mixture.
  4. Toss noodles and flavorings: Add the drained ramen noodles to the skillet along with the low sodium soy sauce and roughly chopped fresh basil. Gently toss everything together to evenly coat the noodles with the buttery sauce and distribute the vegetables and herbs. Remove the skillet from heat.
  5. Serve: Divide the butter ramen noodles among serving bowls. Top each bowl with toasted sesame seeds, additional fresh basil if desired, and optionally add a soft boiled or fried egg on top for extra richness. Serve immediately and enjoy!
