Ingredients
1 lb (450 g) ground beef or turkey
1 medium onion, chopped
3 cloves garlic, minced
4 cups vegetable or beef broth
1 can (14 oz) diced tomatoes
2 cups shredded cabbage
1 medium carrot, diced
½ cup uncooked rice
1 tsp dried oregano
1 tsp smoked paprika
Salt and pepper to taste
Instructions
- Brown the ground beef or turkey in a skillet until fully cooked and crumbled.
- Transfer the cooked meat to a crockpot.
- Add the chopped onion, minced garlic, broth, diced tomatoes, shredded cabbage, diced carrot, uncooked rice, oregano, paprika, salt, and pepper.
- Cover and cook on low for 7–8 hours or on high for 3–4 hours, until the cabbage and rice are tender.
- Stir the soup well before serving and garnish with fresh parsley if desired.
