Description

This hearty Cabbage Roll Soup delivers all the comforting flavors of traditional cabbage rolls—savory meat, tender cabbage, and a tomato-rich broth—without the time-consuming process of rolling. It’s a cozy, one-pot meal that’s easy to prepare and perfect for leftovers.


Ingredients

1 lb (450 g) ground beef or turkey

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable or beef broth

1 can (14 oz) diced tomatoes

2 cups shredded cabbage

1 medium carrot, diced

½ cup uncooked rice

1 tsp dried oregano

1 tsp smoked paprika

Salt and pepper to taste


Instructions

  1. Brown the ground beef or turkey in a skillet until fully cooked and crumbled.
  2. Transfer the cooked meat to a crockpot.
  3. Add the chopped onion, minced garlic, broth, diced tomatoes, shredded cabbage, diced carrot, uncooked rice, oregano, paprika, salt, and pepper.
  4. Cover and cook on low for 7–8 hours or on high for 3–4 hours, until the cabbage and rice are tender.
  5. Stir the soup well before serving and garnish with fresh parsley if desired.

  • Use white long-grain rice for best cooking consistency.
  • Brown rice takes longer to cook, so add it later or cook it separately.
