Ingredients

Chicken Mixture

  • 1 pound ground chicken or ground turkey
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Tortillas & Cooking

  • 8 medium 50/50 mix tortillas (corn/whole wheat)
  • 1/2 Tablespoon avocado oil (for oiling pan)

Dressing

  • 2 teaspoons minced garlic
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 Tablespoon lemon juice
  • 1 Tablespoon olive oil
  • 1 Tablespoon Worcestershire sauce

Toppings

  • 2 cups finely chopped romaine lettuce
  • 1/3 cup feta cheese


Instructions

  1. Mix Chicken & Seasoning: In a large mixing bowl, combine the ground chicken, 2 teaspoons minced garlic, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix thoroughly until well incorporated.
  2. Smash On Tortillas: Scoop about 1/4 cup of the chicken mixture onto a tortilla. Using a fork, press and spread the chicken evenly across the tortilla surface, from edge to edge, to create a thin layer.
  3. Heat Oil: Warm 1/2 tablespoon of avocado oil in a pan over medium-high heat until hot but not smoking.
  4. Cook Chicken Tortilla: Carefully place the tortilla chicken-side down into the hot pan. Cook for 4 to 5 minutes to allow the chicken to brown and cook through.
  5. Flip & Cook: Flip the tortilla and cook for another 1 to 2 minutes on the other side until the chicken is fully cooked and the tortilla is slightly crisp.
  6. Repeat: Continue this process with the remaining tortillas, cooking 2 to 3 at a time if your pan size allows.
  7. Shake Dressing: While cooking the chicken tortillas, whisk or shake together the dressing ingredients: 2 teaspoons minced garlic, 1/2 cup plain Greek yogurt, 2 teaspoons Dijon mustard, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/2 tablespoon lemon juice, 1 tablespoon olive oil, and 1 tablespoon Worcestershire sauce until smooth and combined.
