Instructions

- Smash On Tortillas: Scoop about 1/4 cup of the chicken mixture onto a tortilla. Using a fork, press and spread the chicken evenly across the tortilla surface, from edge to edge, to create a thin layer.
- Heat Oil: Warm 1/2 tablespoon of avocado oil in a pan over medium-high heat until hot but not smoking.
- Cook Chicken Tortilla: Carefully place the tortilla chicken-side down into the hot pan. Cook for 4 to 5 minutes to allow the chicken to brown and cook through.
- Flip & Cook: Flip the tortilla and cook for another 1 to 2 minutes on the other side until the chicken is fully cooked and the tortilla is slightly crisp.
- Repeat: Continue this process with the remaining tortillas, cooking 2 to 3 at a time if your pan size allows.
