Ingredients
Marinade and Chicken
- 3/4 cup balsamic vinegar
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 boneless skinless chicken breasts
- 4 slices mozzarella cheese
Avocado Tomato Topping
- 2 avocados, diced
- 3 roma tomatoes, diced (any tomato will work)
- 1/4 cup fresh chopped basil
- Salt and pepper, to taste
- Balsamic vinegar for drizzling (optional)
Instructions
- Prepare the Marinade: In a medium bowl, whisk together balsamic vinegar, honey, minced garlic, olive oil, Italian seasoning, salt, and black pepper to create a flavorful marinade.
- Marinate the Chicken: Add the boneless skinless chicken breasts to the marinade, ensuring they are fully coated. Let them marinate for 30 minutes to absorb the flavors.
- Prepare the Topping: While the chicken marinates, combine diced avocados, diced roma tomatoes, chopped fresh basil in a small bowl. Season with salt and pepper to taste. Set aside.
- Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken breasts for about 6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through with no pink remaining inside.
- Add the Cheese: During the last minute of grilling, place a slice of mozzarella cheese on each chicken breast to melt slightly.
- Top and Serve: Remove the chicken from the grill and top each breast with the avocado, tomato, and basil mixture. Drizzle with additional balsamic vinegar if desired. Serve immediately for best flavor and texture.
Notes
- Marinating the chicken for a full 30 minutes enhances the flavor but can be done for longer for even more depth.
- Use any ripe tomato if roma tomatoes are unavailable.
- For a vegetarian option, substitute the chicken with grilled portobello mushrooms or firm tofu.
- Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
- Optional balsamic drizzle adds extra tang and sweetness but can be omitted if preferred.
