Instructions

  1. Cook the ground beef: Heat a large skillet over medium heat and add the ground beef. Cook, breaking it up with a spoon or spatula, until no longer pink, about 8 to 10 minutes.
  2. Drain excess grease: Carefully pour off or spoon out any excess fat from the skillet to prevent the dip from being too greasy.
  3. Add cheeses, tomatoes, onions, and seasoning: Into the cooked beef, add the cubed Velveeta, diced tomatoes with green chilies (with their juice), shredded mozzarella, diced red onion, and hamburger seasoning. Stir everything well to combine.
  4. Melt the cheese mixture: Continue cooking over medium heat, stirring often, until the Velveeta and mozzarella cheese are completely melted and the mixture is smooth and creamy, approximately 5 minutes.
  5. Fold in the diced pickles: Add the finely diced dill pickles to the dip and gently stir to distribute evenly without breaking them down too much.
