Description

Ingredients

1 medium head of cauliflower, cut into florets

2 large eggs

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (regular or panko)

2 tablespoons all-purpose flour

2 tablespoons chopped fresh chives (plus extra for garnish)

1 garlic clove, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil or vegetable oil, for frying


Instructions

Steam the cauliflower florets until tender (about 10 minutes), then mash until smooth but slightly textured.

In a large bowl, combine mashed cauliflower, eggs, cheddar cheese, Parmesan cheese, breadcrumbs, flour, chives, garlic, salt, and pepper. Mix well.

Form the mixture into small patties, about 2 inches wide and 1/2 inch thick.

Heat oil in a skillet over medium heat. Fry the patties in batches for 3–4 minutes per side until golden and crispy.

Drain the patties on paper towels and garnish with extra chives. Serve warm with your favorite dipping sauce.

Notes

You can use gluten-free breadcrumbs or flour for a gluten-free version of these patties.

Feel free to adjust the seasoning or cheese according to your taste preferences.
