Description

Chicken Salad Bites are a fresh, creamy, and crunchy appetizer made with a flavorful chicken salad served atop thick cucumber slices. Ideal for parties, light lunches, or healthy snacking.


Ingredients

1 English cucumber, cut into thick slices

4 tbsp cream cheese

2 tbsp sour cream

4 tbsp red hot sauce (adjust to taste)

2 cups cooked chicken breast, shredded (or rotisserie chicken, tuna, or turkey)

1/3 cup diced celery

3 tbsp crumbled blue cheese (or feta or goat cheese)

2 scallions, sliced (or chives or finely diced red onion)

Salt and black pepper, to taste

Fresh dill, chopped, for garnish (or fresh parsley)


Instructions

  1. In a large bowl, combine cream cheese, sour cream, and hot sauce. Blend until smooth.
  2. Add shredded chicken, celery, blue cheese, scallions, salt, and pepper. Mix well.
  3. Slice cucumber into approximately 18 thick rounds.
  4. Spoon about 1 tablespoon of chicken salad onto each cucumber slice and spread evenly.
  5. Garnish with fresh dill or parsley before serving.
