Ingredients
1 English cucumber, cut into thick slices
4 tbsp cream cheese
2 tbsp sour cream
4 tbsp red hot sauce (adjust to taste)
2 cups cooked chicken breast, shredded (or rotisserie chicken, tuna, or turkey)
1/3 cup diced celery
3 tbsp crumbled blue cheese (or feta or goat cheese)
2 scallions, sliced (or chives or finely diced red onion)
Salt and black pepper, to taste
Fresh dill, chopped, for garnish (or fresh parsley)
Instructions
- In a large bowl, combine cream cheese, sour cream, and hot sauce. Blend until smooth.
- Add shredded chicken, celery, blue cheese, scallions, salt, and pepper. Mix well.
- Slice cucumber into approximately 18 thick rounds.
- Spoon about 1 tablespoon of chicken salad onto each cucumber slice and spread evenly.
- Garnish with fresh dill or parsley before serving.
