Ingredients
7 ounces semisweet or bittersweet chocolate, chopped
1/2 cup unsalted butter
3 tablespoons unsweetened cocoa powder
3 large eggs
1 1/4 cups granulated sugar
2 teaspoons vanilla extract
1 cup unbleached all-purpose flour
1/2 teaspoon salt
Instructions
- Start by melting the chopped chocolate using a double boiler or microwave in 20-second intervals, stirring in between to prevent burning.
- Once melted, whisk in the unsweetened cocoa powder and set the mixture aside to cool slightly.
- In a medium bowl, whisk the eggs, sugar, vanilla extract, and salt for about 30 seconds until fully combined.
- Gradually whisk the warm chocolate mixture into the egg mixture. Then, stir in the flour with a wooden spoon until just combined, being careful not to overmix.
- Pour the brownie batter into an 8×8-inch pan lined with parchment paper. Bake at 350°F (175°C) for about 30 minutes. Let the brownies cool completely before proceeding.
- For the ganache, melt the chocolate and heavy cream together in a saucepan over low heat, stirring until smooth. If needed, return the mixture to heat for 30 seconds to fully melt the chocolate.
- Once the brownies have cooled, arrange strawberry halves on top. Pour the ganache over the strawberries and let it set.
