Description

Chocolate-covered strawberry brownies combine fudgy brownies, fresh strawberries, and silky chocolate ganache into an indulgent, decadent dessert. Perfect for any special occasion or simply to satisfy a chocolate craving.


Ingredients

7 ounces semisweet or bittersweet chocolate, chopped

1/2 cup unsalted butter

3 tablespoons unsweetened cocoa powder

3 large eggs

1 1/4 cups granulated sugar

2 teaspoons vanilla extract

1 cup unbleached all-purpose flour

1/2 teaspoon salt


Instructions

  1. Start by melting the chopped chocolate using a double boiler or microwave in 20-second intervals, stirring in between to prevent burning.
  2. Once melted, whisk in the unsweetened cocoa powder and set the mixture aside to cool slightly.
  3. In a medium bowl, whisk the eggs, sugar, vanilla extract, and salt for about 30 seconds until fully combined.
  4. Gradually whisk the warm chocolate mixture into the egg mixture. Then, stir in the flour with a wooden spoon until just combined, being careful not to overmix.
  5. Pour the brownie batter into an 8×8-inch pan lined with parchment paper. Bake at 350°F (175°C) for about 30 minutes. Let the brownies cool completely before proceeding.
  6. For the ganache, melt the chocolate and heavy cream together in a saucepan over low heat, stirring until smooth. If needed, return the mixture to heat for 30 seconds to fully melt the chocolate.
  7. Once the brownies have cooled, arrange strawberry halves on top. Pour the ganache over the strawberries and let it set.

Notes

  • The brownies can be made ahead of time and stored in an airtight container for up to 3 days at room temperature or a week in the fridge.
