Description
Homemade Chipwich, an easy-to-make ice cream sandwich made with freshly baked chocolate chip cookies and creamy vanilla ice cream, offering a nostalgic summer treat.
Ingredients
1 cup unsalted butter (room temperature)
1 cup light brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mini chocolate chips (plus more for rolling)
Vanilla ice cream (homemade or store-bought)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Stir in 1 cup of mini chocolate chips.
- Roll the cookie dough into balls, placing them on a baking sheet. Slightly press each dough ball down to form a flat disc.
- Bake the cookies for 10 to 12 minutes or until golden brown around the edges. Remove from the oven and let them cool completely.
- Freeze the cookies for 20 to 30 minutes.
- To assemble the sandwiches, take one cookie and place a scoop of vanilla ice cream on it. Top with another cookie and gently press down to form a sandwich.
- Roll the sides of the sandwich in mini chocolate chips, then serve immediately or place in the freezer until ready to serve.
Notes
- For added flavor, try using chocolate, cookie dough, or cookies and cream ice cream.
- You can double the recipe if you’re expecting a crowd.
- Store the sandwiches in an airtight container in the freezer for up to 1 month.
- Feel free to mix in nuts, mini M&Ms, or sprinkles into the cookie dough for extra fun!
