Description

Homemade Chipwich, an easy-to-make ice cream sandwich made with freshly baked chocolate chip cookies and creamy vanilla ice cream, offering a nostalgic summer treat.


Ingredients

1 cup unsalted butter (room temperature)

1 cup light brown sugar

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup mini chocolate chips (plus more for rolling)

Vanilla ice cream (homemade or store-bought)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  4. Stir in 1 cup of mini chocolate chips.
  5. Roll the cookie dough into balls, placing them on a baking sheet. Slightly press each dough ball down to form a flat disc.
  6. Bake the cookies for 10 to 12 minutes or until golden brown around the edges. Remove from the oven and let them cool completely.
  7. Freeze the cookies for 20 to 30 minutes.
  8. To assemble the sandwiches, take one cookie and place a scoop of vanilla ice cream on it. Top with another cookie and gently press down to form a sandwich.
  9. Roll the sides of the sandwich in mini chocolate chips, then serve immediately or place in the freezer until ready to serve.

  • For added flavor, try using chocolate, cookie dough, or cookies and cream ice cream.
  • You can double the recipe if you’re expecting a crowd.
