Description

Cornbread casserole is a comforting, flavorful side dish made with cornbread mix, corn, and green chiles. Moist, tender, and just a touch spicy, it’s perfect for family dinners or holiday gatherings.


Ingredients

1 (8.5 oz.) box cornbread or corn muffin mix (such as Jiffy)

1 (14.75 or 15 oz.) can whole kernel corn, rinsed and drained

1 (14.75 or 15 oz.) can creamed corn, undrained

1/4 cup (2 oz.) salted butter, melted, plus more for greasing

2 large eggs

3 Tbsp. sour cream

3 Tbsp. milk

1 (4 oz.) can chopped green chiles


Instructions

  1. Preheat oven to 350°F and grease a 13×9-inch baking dish with butter.
  2. In a large bowl, mix together the cornbread mix, whole corn, creamed corn, melted butter, eggs, sour cream, milk, and green chiles until just combined.
  3. Pour mixture into prepared dish and spread evenly.
  4. Bake for 30–35 minutes, or until golden brown and a toothpick comes out clean.
  5. Let cool for a few minutes before serving.

  • Add shredded cheddar cheese for a melty texture.
  • Use jalapeños or hotter chiles for more heat.
  • Include chopped herbs like chives for added flavor.
