Description

This creamy Avocado Aioli recipe combines ripe avocado with garlic, lemon, Dijon mustard, and olive oil to create a smooth, flavorful sauce perfect for dipping, spreading, or drizzling. Ready in just 5 minutes, it’s a fresh and healthy alternative to traditional mayo-based aioli, offering a vibrant green color and zesty taste.

Ingredients

Aioli Base

  • 1 large ripe avocado
  • 2 cloves garlic
  • 1 teaspoon Dijon mustard
  • Zest of 1 lemon
  • Juice of 1 lemon (~3 tablespoons, to taste)
  • ¼ teaspoon sea salt (to taste)
  • ¼ teaspoon black pepper (to taste)
  • 60 ml (½ cup) olive oil

Instructions

  1. Prepare Ingredients: Peel and stone the avocado, then place it into a mixing container or mini mixer. Add the garlic, Dijon mustard, lemon zest, lemon juice, sea salt, and black pepper to the container.
  2. Blend Base: Using an immersion blender or a standard mixer on high speed, blend all the ingredients together until the mixture is very smooth and creamy.
  3. Emulsify with Olive Oil: While continuing to blend, slowly pour the olive oil into the mixture in a steady, thin stream. This will help emulsify the aioli, creating a rich and silky texture.
  4. Store or Serve: Use the avocado aioli immediately for best freshness, or store it in a sealed container in the refrigerator for up to one day to maintain its flavor and texture.

Notes

  • For a spicier version, add a pinch of cayenne pepper or some chopped fresh chili.
  • Use ripe avocados for a creamier texture and richer flavor.
  • If the aioli thickens after refrigeration, stir in a little water or lemon juice to loosen it before serving.
  • This aioli pairs well with grilled vegetables, sandwiches, seafood, and as a dip for fries or chips.
  • Consume within one day due to the avocado’s tendency to brown.
