Potato Fritters
- 3 medium potatoes (total ~650g/1 ½ lb)
- 1 medium brown onion
- 1 large clove garlic, minced
- 2 whole eggs
- ¼ cup plain flour (all-purpose flour)
- 1 ½ teaspoons fine sea salt, divided
- ½ teaspoon freshly cracked black pepper
- 2 tablespoons vegetable oil or extra virgin olive oil
Instructions
- Preheat Oven: Preheat the oven to a warming temperature of 70°C (160°F) to keep the cooked fritters warm.
- Grate Potatoes and Onion: Using the coarse side of a box grater, grate the potatoes into a colander placed over a large bowl. Peel and quarter the onion, then very finely slice and add it to the grated potatoes. Add ½ teaspoon of salt and mix well to help draw out moisture.
- Drain and Dry: Let the potato and onion mixture sit for 10 minutes to release excess moisture. Rinse well under running water, then transfer the mixture onto a tea towel, cheesecloth, or muslin and squeeze out as much liquid as possible to ensure crisp fritters.
- Mix Ingredients: Place the drained potato and onion mixture into a clean, dry mixing bowl. Add the minced garlic, eggs, flour, remaining salt, and black pepper. Mix thoroughly to combine all ingredients evenly.
- Heat Oil: Heat half of the oil in a nonstick skillet or frying pan over medium heat until shimmering.
- Cook Fritters: Add packed ¼ cup scoops of the potato mixture to the pan, gently pressing down to slightly flatten each fritter. Cook for 5 to 6 minutes on one side until golden brown, then carefully flip and cook the other side until equally golden and cooked through.
- Keep Warm: Transfer the cooked fritters to the preheated oven to keep them warm while you cook the remaining fritters.
- Repeat Cooking: Repeat the frying process with the remaining potato mixture. If any liquid pools at the bottom of the bowl, leave it and do not mix it back into the potato mixture to maintain the right texture.
