Description

A hearty and flavorful one-pot meal featuring smoky kielbasa, tender baby potatoes, and fresh green beans, all slow-cooked in a savory broth with aromatic seasonings.

Ingredients

1 lb Kielbasa or smoked sausage, sliced

1 lb fresh green beans, trimmed

1.5 lbs baby or red/yellow potatoes, halved

1 medium onion, chopped

3 cloves garlic, minced

1 cup chicken broth

2 tbsp butter or olive oil

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika (optional)

Salt and black pepper to taste

Fresh parsley and grated Parmesan (optional garnish)

Instructions

  1. Slice the kielbasa into 1-inch pieces, trim green beans, halve the potatoes, chop the onion, and mince the garlic.
  2. Layer ingredients in the crockpot: kielbasa on the bottom, followed by green beans, potatoes, onion, and garlic.
  3. Sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper over the top.
  4. Pour in the chicken broth and dot with butter or drizzle with olive oil.
  5. Cook on low for 6 hours or on high for 3–4 hours, until the potatoes are tender.
  6. Stir gently and garnish with parsley and Parmesan if desired. Serve hot.

Notes

  • Use hot kielbasa or red pepper flakes for a spicy kick.
  • Add cheddar cheese before serving for a cheesy variation.
  • Try a Cajun seasoning blend for a Southern twist.
  • Include extra vegetables like carrots, corn, or bell peppers.
  • Finish with fresh thyme or rosemary for added flavor.
