Ingredients
1 cup self-rising flour
1 cup cottage cheese (full-fat or low-fat)
1 tablespoon olive oil or melted butter
¼ teaspoon garlic powder or Italian herbs (optional)
¼ cup shredded mozzarella or parmesan (for topping, optional)
Instructions
Make the Dough: In a large bowl, combine the self-rising flour and cottage cheese. Stir until a rough dough forms.
Knead the Dough: Transfer the dough to a floured surface. Knead gently for 1–2 minutes until smooth.
Divide and Shape: Divide the dough into 2 to 4 equal pieces. Roll each piece into a ball and flatten to about ¼-inch thickness.
Cook the Flatbreads: Heat a nonstick skillet or cast-iron pan over medium heat. Cook each flatbread for 2–3 minutes per side, until golden brown with charred spots.
Optional Toppings: Brush the cooked flatbreads with olive oil or melted butter and top with herbs or cheese if desired.
Serve: Serve warm or let cool for later use.
Notes
For smoother texture: Blend the cottage cheese if using large curd.
Dough too sticky? Add a small amount of flour to make the dough easier to handle.
Alternative Baking Method: For a puffier flatbread, bake at 425°F for 10–12 minutes.
