Ingredients
Chicken Filling
- 1 tbsp oil
- 1 lb chicken breast, cut into small pieces
- 1 tbsp taco seasoning
- 1/2 large bell pepper, diced
- 1/2 yellow onion, diced
Quesadilla Assembly
- 2 tbsp unsalted butter
- 6 flour tortillas
- 2 cups Mexican cheese blend
Instructions
- Cook Chicken: Preheat a skillet over medium heat and add 1 tablespoon of oil. Add the chicken pieces and sprinkle with 1 tablespoon of taco seasoning. Cook the chicken for about 4 minutes, stirring occasionally to ensure even cooking.
- Add Veggies: Add the diced bell pepper and yellow onion to the skillet with the chicken. Continue cooking for an additional 5 minutes, or until the chicken is cooked through and the vegetables have softened and gained some color. Remove the mixture from heat and set aside.
- Build Quesadilla: Heat a clean skillet over medium heat and add a small amount of butter or oil to coat the surface. Place one flour tortilla on the skillet, then evenly sprinkle some Mexican cheese on one half of the tortilla. Add a portion of the chicken and vegetable mixture on top of the cheese, then add another layer of cheese over the filling. Fold the tortilla in half to enclose the filling.
- Turn Quesadilla: Cook the folded quesadilla for a few minutes until the underside is golden brown. Carefully flip it over and cook the other side until golden and the cheese is fully melted. Repeat this process for the remaining tortillas and filling.
- Enjoy: Serve the quesadillas warm for the best taste and gooey texture. Optionally, pair with salsa, sour cream, or guacamole.
Notes
- Use a Mexican cheese blend for the best melt and flavor.
- Taco seasoning can be store-bought or homemade.
- You can customize the veggies by adding corn or jalapeños.
- Flour tortillas work best due to their pliability and browning ability.
- Cook on medium heat to ensure the cheese melts without burning the tortillas.
