Description

This one-bowl chocolate chip banana bread is a moist, flavorful loaf combining ripe bananas, rich chocolate chunks, and a mix of butter, oil, and Greek yogurt for perfect texture. Ideal for breakfast, dessert, or a snack.


Ingredients

1/4 cup butter (melted)

1/4 cup vegetable oil

1/4 cup caster sugar

1/4 cup brown sugar

2 eggs

1 tsp vanilla extract

3 ripe bananas (2 mashed, 1 sliced)

1/2 cup full-fat Greek yogurt

1 1/2 cups plain flour

1 tsp bicarbonate of soda

1/2 tsp salt

3/4 cup chocolate chips or chunks (reserve some for topping)


Instructions

  1. Preheat oven to 180°C (356°F). Grease and line a 2-lb loaf tin.
  2. Melt the butter over medium heat and allow it to cool.
  3. In a large mixing bowl, whisk together oil, caster sugar, brown sugar, eggs, mashed bananas, cooled butter, and Greek yogurt until smooth.
  4. Sift in flour, then add bicarbonate of soda and salt. Stir until just combined.
  5. Fold in most of the chocolate chips or chunks, saving a few for the top.
  6. Pour the batter into the prepared loaf tin. Top with sliced banana and reserved chocolate chips.
  7. Bake for about 40 minutes, or until a skewer inserted into the center comes out with a few moist crumbs.
  8. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

  • Mix in cinnamon and nutmeg for a spiced twist.
  • Use coconut sugar or honey and whole wheat flour for a healthier option.
