Ingredients

Dry Ingredients

  • 1 Cup all purpose flour
  • 1 Tsp baking powder

  • ½ Tsp paprika (or more to taste)
  • 1 Tbsp sugar

Wet Ingredients

  • 2 Large eggs
  • ½ Cup milk

Add-ins

  • 2 Cups sweet corn kernels
  • ¼ Cup chopped green onions (or spring onions)
  • ⅛ Cup chopped parsley (or more to taste)


Instructions

  1. Combine Dry: In a large mixing bowl, combine all the dry ingredients—flour, baking powder, salt, paprika, and sugar—mixing well to ensure even distribution.
  2. Whisk Wet: In a separate bowl, whisk together the eggs and milk until fully blended and smooth.
  3. Pour Liquid: Make a well in the center of the dry ingredients and pour in the egg and milk mixture.
  4. Mix Batter: Stir thoroughly to combine everything; the batter should have a thick pancake-like consistency.
  5. Add Corn and Herbs: Fold in the sweet corn kernels, chopped green onions, and parsley evenly throughout the batter.
  6. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C). Spray the basket with nonstick cooking spray or line it with parchment paper to prevent sticking.
  7. Shape Fritters: Scoop 1-2 tablespoons of batter depending on desired fritter size, and drop them into the air fryer basket. Press each slightly to flatten, arranging in a single layer with some space between each for expansion.
  8. Cook First Side: Cook the fritters on the air fry setting at 375°F for 7 minutes until they begin to turn golden brown.
  9. Flip and Cook Second Side: Carefully flip each fritter with a spatula, then cook for an additional 4 to 6 minutes until the other side is browned and the fritters are cooked through.
