- 2 zucchini, quartered lengthwise
- 1/4 cup egg white
- 1/2 cup almond flour

Instructions

- Make dry coating: On a large flat plate, combine almond flour, grated parmesan cheese, garlic powder, smoked paprika, and basil. Mix thoroughly.
- Dredge zucchini fries: Dip each zucchini fry first into the egg whites ensuring even coating, then press into the almond flour mixture to coat both sides well. Shake off any excess coating.
- Arrange fries for cooking: Place the coated zucchini fries in a single layer on a parchment paper lined baking sheet and generously spray them with avocado cooking spray for extra crispness.
- Preheat air fryer: Set the air fryer to 400°F and heat for 2 minutes. Spray the air fryer rack with cooking spray to prevent sticking.
- Air fry zucchini: Place 8-10 zucchini fries carefully in the air fryer basket ensuring they do not touch or crowd to allow even browning. Air fry for 6-8 minutes until the coating is lightly browned and crispy.
