Ingredients

Roasted Garlic

  • 3 heads garlic
  • 2 tbsp olive oil
  • Salt (optional, to taste)

Dip Base

  • 8 oz. package cream cheese, softened
  • 3/4 cup cottage cheese
  • 1/4 cup mayonnaise

Cheeses and Seasonings

  • 1 1/2 cups shredded mozzarella cheese (divided: 1 cup for dip, 1/2 cup for topping)
  • 1 1/2 cups grated parmesan cheese (divided: 1 cup for dip, 1/2 cup for topping)
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 2 tbsp fresh parsley (divided: 1 tbsp for dip, 1 tbsp for garnish)
  • 3 tbsp chopped chives (divided: 2 tbsp for dip, 1 tbsp for garnish)


Instructions

  1. Preheat and Prepare Garlic: Preheat your oven to 375°F (190°C). Slice off about 1/4 inch from the top of each garlic head to expose the tops of the cloves. Place each head on a piece of aluminum foil and drizzle with olive oil, ensuring the exposed cloves are well coated. Optionally, sprinkle a little salt over the garlic for enhanced flavor.
  2. Roast Garlic: Wrap the garlic heads tightly in the foil and place them on a baking sheet or directly on the oven rack. Roast for 30-40 minutes until the cloves become soft and golden brown, then remove from the oven and let cool slightly.
  3. Mix the Dip Base: In a large bowl, squeeze the roasted garlic cloves out of their skins and add them to the softened cream cheese, cottage cheese, and mayonnaise. Use a handheld mixer to blend the mixture until it is smooth and creamy.
  4. Combine Cheeses and Herbs: Fold into the cream cheese mixture 1 cup shredded mozzarella, 1 cup grated parmesan, 2 tablespoons chopped chives, 1 tablespoon chopped parsley, onion powder, salt, and garlic powder. Mix until all ingredients are fully incorporated.
  5. Layer and Bake: Spoon the dip mixture into a baking dish and spread it evenly. Sprinkle the remaining mozzarella and parmesan cheese on top. Bake in the preheated oven for 15-20 minutes, or until the dip is bubbly and golden brown on the surface.
