Description

Garlic Butter Beef Bites with Potatoes is a rich and comforting dish combining tender beef stew meat, hearty baby potatoes, and a luscious garlic butter sauce. This easy slow cooker recipe delivers maximum flavor with minimal prep, perfect for weeknight dinners or cozy weekends. Packed with savory garlic, herbs, and buttery goodness, it’s a family-friendly meal everyone will love.

Ingredients

1 1/2 pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 cup beef broth

1 tablespoon olive oil

Instructions

  1. Prepare the Ingredients: Cut the beef into bite-sized pieces and halve the baby potatoes.
  2. Cook the Potatoes: Optionally, parboil the baby potatoes for a few minutes to soften them.
  3. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Sear the beef pieces until browned on all sides, then transfer to a slow cooker.
  4. Make the Garlic Butter Sauce: In a small bowl, combine melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Stir to combine.
  5. Combine Everything: Add the potatoes to the slow cooker, followed by the beef. Pour the garlic butter sauce over the top, and add beef broth to keep it moist.
  6. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and potatoes are soft.
