Wrap and Filling

  • 2 large tortillas (regular or low-carb/high-protein)
  • 7 oz cooked chicken, chopped (about 200 grams, rotisserie chicken recommended)
  • 2 garlic cloves, minced or grated (adjust to taste)
  • 2 tablespoons light mayonnaise
  • 1 tablespoon light Greek yogurt or plain yogurt
  • 2 teaspoons hot sauce (such as Frank’s)
  • ¼ teaspoon salt

  • 3 oz grated cheese (about 90 grams; cheddar blend used)
  • 1 green onion, chopped
  • Olive oil spray


Instructions

  1. Mix chicken filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, light Greek or plain yogurt, hot sauce, and salt. Mix thoroughly until all ingredients are well incorporated and the chicken mixture is creamy and evenly seasoned.
  2. Lay out wrap and assemble: Place a tortilla flat on your work surface. Sprinkle about 2 tablespoons of grated cheese on the lower third of the tortilla. Then, spoon approximately ⅔ cup of the chicken mixture over the cheese. Add another tablespoon of cheese on top of the chicken mixture, followed by a sprinkle of chopped green onion to add freshness and color.
  3. Fold wrap: Fold the sides of the tortilla inward, then tightly roll it up starting from the bottom end, ensuring the filling is securely enclosed inside the wrap to prevent spilling during cooking.
  4. Prepare pan for cooking: Heat a non-stick skillet or frying pan over medium-high heat. Lightly spray the pan with olive oil spray to prevent sticking and help crisp the tortilla as it cooks.
