Description

A zesty and refreshing Ginger Salad Dressing made with fresh grated carrots, ginger, and shallots, perfectly balanced with rice vinegar, soy sauce, and a touch of coconut sugar. This quick and easy dressing adds vibrant flavor to any salad and can be whipped up in just 5 minutes.

Ingredients

Vegetables and Aromatics

  • 3/4 cup carrots (peeled & grated)
  • 1 tablespoon ginger (grated)
  • 1 tablespoon shallots (grated, more if desired)

Liquids and Seasonings

  • 1/2 cup extra virgin olive oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 3 teaspoons coconut sugar
  • 1/4 teaspoon kosher salt

Instructions

  1. Blend: Combine all the ingredients—grated carrots, ginger, shallots, olive oil, rice vinegar, soy sauce, coconut sugar, and kosher salt—into a small food processor or blender. Blend on high speed until the mixture is fully combined and smooth in texture.
  2. Serve: Pour the dressing over your favorite salad. It pairs wonderfully with fresh greens and is especially delicious drizzled over a Ginger Salad with Shrimp. Enjoy immediately or store in the refrigerator for later use.

Notes

  • Adjust the amount of grated shallots according to your taste preference for a milder or stronger onion flavor.
  • For a sweeter dressing, add a bit more coconut sugar.
  • Can be stored in an airtight container in the refrigerator for up to 5 days.
  • Shake or whisk well before each use as ingredients may separate upon standing.
  • Use tamari instead of soy sauce for gluten-free option.
