Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

For the Broccoli:

2 cups broccoli florets

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil with salt and pepper. Coat the chicken breasts and let them marinate for about 15 minutes.
  2. Prepare the Broccoli: Steam or microwave the broccoli florets for 3-5 minutes until they’re bright green and tender.
  3. Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C).
  4. Make the Creamy Garlic Sauce: In a small bowl, mix Greek yogurt, minced garlic, and lemon juice. Season with salt and pepper to taste and stir until smooth.
  5. Slice and Serve: Let the chicken rest for a few minutes before slicing. Serve in bowls with a generous portion of broccoli, sliced chicken, and drizzle the creamy garlic sauce on top.

Notes

  • Add a Carb: For a heartier meal, serve the chicken and broccoli with quinoa, brown rice, or cauliflower rice.
  • Vegetable Variations: You can replace broccoli with spinach, Brussels sprouts, or zucchini.
  • Flavor Boost: Season chicken with paprika, thyme, or garlic powder. Add fresh parsley or basil for extra flavor.
