Ingredients

Kofta Ingredients

  • 500 grams ground chicken
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil (for grilling)

Garlic Yogurt Sauce

  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of salt


Instructions

  1. Mix the Kofta Ingredients: In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and ground black pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Form the Koftas: Shape the mixture into small oval-shaped koftas, about the size of a golf ball, pressing firmly to hold the shape.
  3. Preheat the Grill: Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
  4. Grill the Koftas: Place the koftas on the preheated grill and cook for about 10-12 minutes, turning occasionally to ensure they cook evenly and develop a nice char, until they are fully cooked through.
  5. Prepare the Garlic Yogurt Sauce: In a separate bowl, combine the plain yogurt, freshly squeezed lemon juice, and a pinch of salt. Mix well to create a smooth and tangy garlic yogurt sauce.
  6. Serve: Serve the grilled chicken koftas hot, with the garlic yogurt sauce on the side for dipping or drizzling.

Notes

  • Ensure the koftas are cooked through by checking that the internal temperature reaches 75°C (165°F).
