Description

This Avocado Chicken Recipe features juicy grilled chicken breasts marinated in a zesty blend of olive oil, lime juice, garlic, and spices. Topped with fresh sliced avocados, cherry tomatoes, and melted shredded cheese, this dish is flavorful, colorful, and perfect for a satisfying meal. Garnished with cilantro and a drizzle of balsamic glaze, it combines creamy, tangy, and smoky flavors for a delightful dish that serves four.

Ingredients

Chicken and Marinade

  • 4 boneless skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Toppings

  • 2 California avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • Chopped cilantro, for garnish
  • Balsamic glaze, for drizzling
  • Diced red onion, optional

Instructions

  1. Marinate the Chicken: In a bowl or zip-top bag, whisk together olive oil, lime juice, minced garlic, paprika, ground cumin, salt, and black pepper. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours to allow the flavors to infuse.
  2. Preheat the Grill: Heat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent the chicken from sticking during cooking.
  3. Grill the Chicken: Remove the chicken from the marinade, shaking off excess liquid. Place the chicken on the grill and cook for 6 to 7 minutes per side. Avoid frequent flipping to allow the chicken to develop a nice sear. Cook until the internal temperature reaches 165°F (75°C) ensuring it is fully cooked.
  4. Add Toppings: Once the chicken is cooked, top each piece with sliced avocado, halved cherry tomatoes, and shredded cheese. Close the grill lid and let the cheese melt for 1 to 2 minutes.
  5. Serve: Transfer the chicken to plates and garnish with chopped fresh cilantro and a drizzle of balsamic glaze. Add diced red onion if desired. Serve immediately alongside your favorite sides for a complete meal.

Notes

  • Marinate the chicken for longer up to 4 hours for deeper flavor, but do not exceed to prevent texture changes.
  • If you don’t have a grill, a grill pan or stovetop skillet can be used instead.
  • Use ripe but firm avocados to hold their shape when sliced.
  • Balsamic glaze adds a touch of sweetness and acidity but can be omitted or substituted with a squeeze of fresh lime juice.
  • Check the internal temperature of chicken for food safety, aiming for 165°F (75°C).
