Description

A fresh and vibrant salad featuring grilled peaches, mixed greens, and a tangy balsamic glaze, perfect for a light and flavorful meal or side dish.

Ingredients

Salad Ingredients

  • 4 Peaches
  • 16 oz Mixed Greens (or Spinach or Arugula)
  • ½ Red Onion, thinly sliced
  • 1 Cup Blueberries
  • ½ Cup Pecans
  • ¼ Cup Feta Cheese, crumbled

For Grilling

  • 4 tsp Canola Oil
  • ¼ tsp Salt

For Dressing

  • Balsamic Glaze (balsamic reduction), amount as desired for drizzling

Instructions

  1. Prepare the Peaches: Wash and dry the peaches thoroughly. Cut each peach in half along the natural line and remove the pit carefully. Brush the cut side of each peach half with canola oil and lightly sprinkle with salt.
  2. Grill the Peaches: Preheat a grill or grill pan over medium heat. Place the peaches cut side down on the grill. Grill for 4 to 5 minutes without flipping to create a caramelized surface while maintaining some firmness, ideal for salad textures.
  3. Assemble the Salad: In a large bowl or on a large serving platter, layer the mixed greens, thinly sliced red onions, fresh blueberries, pecans, and crumbled feta cheese to create a colorful base.
  4. Slice and Add Peaches: Cut the grilled peaches into wedges and arrange them either mixed into or on top of the salad components for a beautiful presentation and balanced flavor mix.
  5. Finish with Balsamic Glaze: Drizzle the balsamic reduction evenly over the assembled salad to add a sweet and tangy finishing touch. Serve immediately for best freshness and presentation.

Notes

  • Use fresh, ripe peaches for the best flavor and grill marks.
  • Canola oil is chosen for its light flavor and high smoke point, but olive oil can be substituted if preferred.
  • The pecans add a nice crunch; for a nut-free version, omit or substitute with seeds like pumpkin or sunflower.
  • Balsamic glaze can be store-bought or homemade by simmering balsamic vinegar until thickened.
  • This salad works well as a light entrée or a colorful side dish.
  • To make the peaches more tender, grill them briefly on the flesh side as well, but this recipe keeps the peach texture firmer for salad.
