This healthy quesadilla recipe is a delicious and simple snack made with whole wheat tortillas, creamy hummus, cilantro, avocado slices, and crumbled queso fresco. It’s a quick, nutritious option perfect for a light meal or satisfying snack, combining fresh ingredients and bold flavors with easy stovetop cooking.
Ingredients
Quesadillas
- 4 whole wheat tortillas
- 1/4 cup hummus
- 1/4 teaspoon ground cumin
- 1 tablespoon minced cilantro
- 1/2 California avocado, cut into 12 slices
- 1 1/2 ounces crumbled queso fresco
Instructions
- Cut tortilla circles: Using a 2½-inch circle cookie cutter or a glass with a 3½-inch circumference and a small knife, cut 3 circles from each whole wheat tortilla, resulting in 12 small tortilla circles.
- Prepare hummus mixture: In a small bowl, combine the hummus, ground cumin, and minced cilantro. Stir well to blend the spices and herbs into the hummus for added flavor.
- Assemble quesadillas: Spread about 1 teaspoon of the hummus mixture evenly on each tortilla circle. Arrange the avocado slices and crumbled queso fresco evenly over one half of each coated tortilla circle, preparing them to be folded or cooked.
- Cook quesadillas: Heat a large skillet over medium heat. Place several quesadillas into the skillet at once, cooking each side for 2 to 3 minutes or until the tortillas turn golden brown and slightly crisp.
- Serve: Remove the quesadillas from the skillet and repeat the cooking process with remaining tortillas. Serve warm as a tasty and healthy snack or light meal.
Notes
- Using whole wheat tortillas increases fiber content and adds a nutty flavor.
- You can substitute queso fresco with feta or cotija cheese for a different flavor.
- Adjust cumin quantity to taste for more or less spice.
- Ensure the skillet is well-heated before cooking to get a nicely crisp tortilla.
- Serve with salsa or a squeeze of lime for an extra zing if desired.
