Ingredients
For the Cod:
- 1 pound cod fillets, cut into 4 pieces
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
For the Roasted Brussels Sprouts:
- 1 pound Brussels sprouts, trimmed and halved
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
For the Lemon Garlic Butter Sauce:
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to get ready for roasting the Brussels sprouts.
- Prepare Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, garlic powder, onion powder, salt, and pepper to evenly coat them with the seasonings.
- Roast Brussels Sprouts: Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the oven for 20-25 minutes, flipping halfway through, until they are tender-crisp and slightly caramelized.
- Marinate Cod: In a medium bowl, combine cod fillets with olive oil, minced garlic, lemon juice, oregano, salt, and black pepper. Coat the fish evenly and let it marinate for a few minutes to develop flavor.
- Cook Cod: Heat a large skillet over medium-high heat. Place the cod fillets gently into the skillet and cook for 3-4 minutes per side, or until the fish flakes easily with a fork, being careful not to overcook.
- Make Lemon Garlic Butter Sauce: In a small saucepan, melt the butter over medium heat. Stir in minced garlic and cook about 1 minute until fragrant. Remove from heat and mix in lemon juice, chopped parsley, salt, and pepper.
- Assemble Bowls: Divide the roasted Brussels sprouts among serving bowls. Top each with cooked cod fillets and drizzle generously with the lemon garlic butter sauce.
- Serve: Serve immediately while warm for a wholesome and flavorful meal.
Notes
- You can substitute cod with other firm white fish like haddock or halibut if desired.
- For extra crispness, ensure Brussels sprouts are dry before tossing with oil.
- Use fresh lemon juice for the best bright flavor in the sauce.
- Adjust seasoning to taste, especially salt and pepper, at the end.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
