Ingredients

1 cup rolled oats

1/2 cup mixed nuts (cashews, almonds, walnuts), roughly chopped

1/4 cup pumpkin seeds

2 tablespoons chia seeds

2 tablespoons flaxseeds

1/2 cup dried cranberries (or raisins)

1/4 cup natural peanut butter or almond butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt


Instructions

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine oats, mixed nuts, seeds, dried cranberries (or raisins), cinnamon, and salt.

In a small saucepan over low heat, melt the peanut butter (or almond butter) and honey (or maple syrup) until smooth. Stir in vanilla extract.

Pour the wet mixture over the dry ingredients and stir until everything is fully coated.

Using a cookie scoop or spoon, form small cookies on the baking sheet and gently press them into rounds.

Bake for 12–15 minutes or until golden and firm. Let cool completely on a rack to set.
