Dry Ingredients

  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp coarse salt
  • 1 tsp sugar
  • 1/2 cup fresh grated Parmesan cheese
  • 2 tsp minced fresh rosemary
  • 2 tsp minced fresh thyme

Wet Ingredients

  • 6 tbsp cold unsalted butter
  • 1 cup cold buttermilk

Topping

  • 2 tbsp unsalted butter (melted, for topping)
  • 1 garlic clove (pressed, for topping)
  • 2 tbsp fresh grated Parmesan cheese (topping)


Instructions

  1. Preheat and Prepare Garlic Butter: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. In a small bowl, combine the unsalted butter and pressed garlic, setting it aside to use later as a flavorful topping.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, coarse salt, sugar, Parmesan cheese, minced rosemary, and minced thyme until well combined.
  3. Cut in Cold Butter: Chop the cold unsalted butter into small pieces and add it to the dry mixture. Using a mixer on low speed or a pastry cutter, mix until the mixture resembles coarse crumbs, ensuring small, pea-sized pieces of butter remain.
  4. Add Buttermilk and Form Dough: Pour the cold buttermilk into the center of the crumb mixture. Mix gently on low speed until just combined and the dough becomes sticky, avoiding overmixing to keep the biscuits tender.
  5. Knead and Shape Dough: Transfer the dough onto a lightly floured surface, sprinkle a little flour on top, and knead it gently 5-6 times by folding it over itself. Pat the dough into a ½ inch thick circle, taking care not to overhandle.
