Ingredients
Bread
- 2-3 slices pumpernickel bread
Herbed Feta Spread
- 2 oz. cream cheese, softened
- 4 oz. feta cheese crumbles
- 1/4 cup sour cream
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
- 2 Tbsp. fresh dill, minced (plus extra for sprinkling)
Toppings
- A few slices of English cucumber
- A few sliced radishes
- A few thin slices of red onion
- Kosher salt and pepper to taste
Instructions
- Toast the bread. Toast the pumpernickel bread slices until they are crisp and golden, either using a toaster or a skillet.
- Make the herbed feta spread. In a bowl, whisk together the softened cream cheese, feta cheese crumbles, sour cream, kosher salt, and black pepper until the mixture is smooth and creamy. Gently fold in the minced fresh dill.
- Spread the mixture. Evenly spread the herbed feta mixture on top of each toasted bread slice, ensuring a generous layer for flavor.
- Add fresh toppings. Arrange slices of English cucumber, radishes, and thin red onion on top of the spread. Finish by sprinkling with additional kosher salt, black pepper, and fresh dill to taste.
Notes
- You can substitute rye or whole wheat bread for a different texture and flavor.
- For a tangier spread, use Greek yogurt instead of sour cream.
- Adjust salt and pepper according to your taste preference, especially since feta can be salty.
- Radishes and red onions add crunch and sharpness, but they can be omitted or replaced with cherry tomatoes or bell peppers.
- This spread can be made ahead and stored in the fridge for up to 2 days.
