Ingredients
2 cups fresh blueberries
½ cup water
½ cup granulated sugar
1 tablespoon fresh lemon juice
Pinch of salt
2 tablespoons cornstarch mixed with 2 tablespoons water
½ teaspoon vanilla extract
Instructions
- In a saucepan over medium heat, combine blueberries, water, sugar, lemon juice, and salt. Bring to a gentle simmer, stirring often.
- Whisk together cornstarch and water, then add the slurry to the saucepan.
- Simmer for 5–7 minutes until the mixture thickens and coats the back of a spoon.
- Remove from heat and stir in the vanilla extract.
