Ingredients
Meatloaf:
- 1 1/2 lb. ground beef
- 2 cloves garlic, minced
- 1 tsp minced ginger
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1/3 cup diced green onion
- 1 egg
- 1 cup diced shiitake mushrooms (white button mushrooms can be used as a substitute)
- 1 cup panko bread crumbs
Top Sauce:
- 1/3 cup ketchup
- 2 tbsp hoisin sauce
- 1 to 2 tsp Sriracha (adjust to taste)
- 1/4 cup diced green onions (for topping)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C). Line a 9×13 inch casserole dish with tinfoil and set it aside to prepare for baking.
- Prepare Meatloaf Mixture: In a large bowl, combine the ground beef, minced garlic, minced ginger, soy sauce, hoisin sauce, diced green onions, egg, diced shiitake mushrooms, and panko bread crumbs. Use your hands to thoroughly mix all the ingredients together, ensuring an even distribution of flavors throughout the mixture.
- Shape the Meatloaf: Shape the meat mixture into a loaf approximately 4 inches wide by 8 inches long and place it in the center of the prepared casserole dish.
- Make and Add Top Sauce: In a separate bowl, mix together the ketchup, hoisin sauce, and Sriracha until well combined. Pour this sauce evenly over the top of the meatloaf, covering it completely to add flavor and moisture during baking.
- Bake the Meatloaf: Place the casserole dish in the preheated oven and bake the meatloaf for one hour, or until the internal temperature reaches 160 degrees F (71 degrees C) and the meat is fully cooked through.
- Cool and Serve: Once done, remove the meatloaf from the oven and let it cool slightly for a few minutes. Top with the remaining diced green onions if desired. Slice the meatloaf and serve warm.
Notes
- You can substitute white button mushrooms if shiitake mushrooms are not available.
- Adjust the amount of Sriracha in the top sauce to suit your preferred spice level.
- Letting the meatloaf rest after baking helps it hold together better when slicing.
- This meatloaf can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
- For a gluten-free version, substitute panko bread crumbs with gluten-free breadcrumbs or crushed gluten-free crackers.
