Ingredients
1 whole chicken (about 4 pounds)
2 lemons, sliced
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1/4 cup olive oil
Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the lemon slices inside the chicken cavity.
- Rub the herb mixture all over the chicken, making sure it’s evenly coated.
- Roast the chicken in a baking dish for 1.5 hours, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.
