Description

This Lemon Herb Roasted Chicken is a juicy, flavorful, and aromatic dish made with fresh herbs, garlic, and lemon, perfect for both special occasions and easy weeknight dinners.


Ingredients

1 whole chicken (about 4 pounds)

2 lemons, sliced

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1/4 cup olive oil

Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the lemon slices inside the chicken cavity.
  4. Rub the herb mixture all over the chicken, making sure it’s evenly coated.
  5. Roast the chicken in a baking dish for 1.5 hours, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving.
