Ingredients
2 large chicken breasts (about 1 ½ pounds) or 4 smaller pieces
Flour (or cornstarch/arrowroot flour for gluten-free)
Lemon pepper seasoning
Butter
Fresh lemon juice and zest
Minced garlic (preferably fresh)
Chicken broth
Instructions
- Slice the chicken breasts in half horizontally to create thinner pieces. Combine flour with lemon pepper seasoning and sprinkle it on both sides of the chicken, pressing the seasoning gently into the meat.
- Heat oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes on one side, then flip and cook for another 3-4 minutes until the internal temperature reaches 160-165°F. Remove from the pan and set aside.
- In the same pan, melt butter and add minced garlic. Sauté for 30 seconds until fragrant.
- Pour in chicken broth and fresh lemon juice. Let the sauce reduce for 1-2 minutes until it thickens slightly.
- Return the chicken to the pan and spoon the sauce over the top. Let the chicken soak in the sauce for 1 minute.
- Garnish with lemon zest, parsley, and lemon slices if desired. Serve immediately and enjoy!
