Description

Ingredients

1 cup Medjool dates, pitted

3/4 cup raw cashews

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1 tablespoon poppy seeds

Pinch of salt

Shredded coconut (optional, for rolling)


Instructions

  1. If dates are dry, soak in warm water for 5 minutes, then drain.
  2. In a food processor, pulse dates and cashews until finely chopped and combined.
  3. Add lemon zest, lemon juice, and salt. Process until a sticky dough forms.
  4. Add poppy seeds and pulse a few times to combine, or fold in by hand.
  5. Scoop tablespoon-sized portions and roll into balls.
  6. Optional: roll each ball in shredded coconut.
  7. Chill in the refrigerator for at least 30 minutes before serving.
