Description

A chilled, layered Mango Berry Parfait combining creamy mango blend, tangy berry chia jam, crunchy nuts and seeds, and light whipped yogurt—a refreshing summer treat.


Ingredients

2 ripe sweet mangoes (Alphonso, Kesar, or Ataulfo), peeled and chopped

1/2 cup chenna (cottage cheese) or paneer

2 tbsp cream cheese (optional)

1/4 cup milk

23 tbsp sugar or honey (to taste)

Pinch of salt

1 cup mixed berries (blueberries, strawberries, jamun)

1 tbsp chia seeds (soaked in 1/2 cup water for 30 minutes)

12 tbsp honey (to taste)

1 cup crushed graham crackers or digestive biscuits

2 tbsp melted butter

1/4 cup coarsely crushed almonds, cashews, pistachios

2 tbsp pumpkin seeds

2 tbsp sunflower seeds

1 cup whipped Greek yogurt or thick plain yogurt

1/2 cup diced fresh mango (for garnish)

1 tsp black sesame seeds (for garnish)


Instructions

  1. Blend mangoes, chenna, cream cheese (if using), milk, sweetener, and salt into a thick, creamy mixture. Chill until needed.
  2. Mash berries and jamun in a bowl. Mix in soaked chia seeds and honey. Chill for 30 minutes until jam thickens.
  3. Combine crushed biscuits with melted butter to form a crumbly base layer.
  4. In serving glasses, layer the crushed cookie mixture at the bottom.
  5. Add a layer of berry chia jam over the cookie layer.
  6. Sprinkle crushed nuts and seeds over the jam.
  7. Spoon in the creamy mango layer.
  8. Top with whipped yogurt.
  9. Garnish with diced mango and black sesame seeds. Serve chilled.

Notes

  • Use fully ripe mangoes for best flavor and sweetness.
  • Frozen berries can be used; thaw before mashing.
  • Soaking chia seeds before mixing is essential for thickening.
