Description
These Mashed Potato Nests are a delightful and comforting dish featuring creamy mashed potatoes shaped into nests and filled with a savory mixture of cooked meat, sautéed vegetables, and melted cheddar cheese. Baked to golden perfection, they make a perfect appetizer or main course for family dinners or gatherings.
Ingredients
Potatoes and Mash:
- 4 large Potatoes (russets or Yukon gold)
- 4 tablespoons Butter (unsalted preferred)
- 1 cup Milk (whole or plant-based)
- Salt (to taste)
- Pepper (to taste)
Filling:
- 1 cup Cheddar cheese (shredded)
- 1 cup Cooked meat (diced – ground beef, chicken, turkey, or vegetarian alternative)
- 1 cup Vegetables (finely chopped – carrots, peas, or bell peppers)
- 1 Egg (or vegan alternative)
Instructions
- Prepare the Potatoes: Peel and cube the potatoes, then boil them in salted water for 15-20 minutes until they are fork-tender, ensuring they will mash smoothly.
- Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add the butter and milk, mashing until you achieve a creamy texture. Season with salt and pepper to taste.
- Assemble the Filling: In a mixing bowl, combine the cooked diced meat, sautéed vegetables, half of the shredded cheddar cheese, and the egg or vegan alternative to bind the mixture together.
- Form the Nests: Preheat your oven to 375°F (190°C). Grease the cups of a muffin tin, then shape the mashed potatoes into nest shapes in each cup, creating a cavity for the filling.
- Fill the Nests: Spoon the prepared filling mixture into the potato nests evenly, then sprinkle the remaining shredded cheddar cheese on top of each nest.
- Bake: Place the muffin tin in the oven and bake for 20-25 minutes until the cheese is bubbly and the tops are golden brown, indicating they’re heated through and perfectly cooked.
- Serve: Allow the mashed potato nests to cool slightly before carefully removing them from the tin. Serve warm and enjoy this hearty and flavorful dish.
Notes
- You can customize the filling with your choice of cooked meats or make it vegetarian by using plant-based alternatives.
- For creamier mashed potatoes, warm the milk before adding it to the potatoes.
- If you are vegan, use a plant-based milk, vegan butter, and an egg substitute such as flax or chia egg.
- These nests can be prepared ahead of time and baked just before serving for convenience.
- Use a fork to test the potatoes for tenderness during boiling to ensure they mash smoothly.
