Ingredients

Potatoes and Mash:

  • 4 large Potatoes (russets or Yukon gold)
  • 4 tablespoons Butter (unsalted preferred)
  • 1 cup Milk (whole or plant-based)
  • Salt (to taste)
  • Pepper (to taste)

Filling:

  • 1 cup Cheddar cheese (shredded)
  • 1 cup Cooked meat (diced – ground beef, chicken, turkey, or vegetarian alternative)
  • 1 cup Vegetables (finely chopped – carrots, peas, or bell peppers)
  • 1 Egg (or vegan alternative)


Instructions

  1. Prepare the Potatoes: Peel and cube the potatoes, then boil them in salted water for 15-20 minutes until they are fork-tender, ensuring they will mash smoothly.
  2. Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add the butter and milk, mashing until you achieve a creamy texture. Season with salt and pepper to taste.
  3. Assemble the Filling: In a mixing bowl, combine the cooked diced meat, sautéed vegetables, half of the shredded cheddar cheese, and the egg or vegan alternative to bind the mixture together.
  4. Form the Nests: Preheat your oven to 375°F (190°C). Grease the cups of a muffin tin, then shape the mashed potatoes into nest shapes in each cup, creating a cavity for the filling.
  5. Fill the Nests: Spoon the prepared filling mixture into the potato nests evenly, then sprinkle the remaining shredded cheddar cheese on top of each nest.
  6. Bake: Place the muffin tin in the oven and bake for 20-25 minutes until the cheese is bubbly and the tops are golden brown, indicating they’re heated through and perfectly cooked.
