Description

This Mediterranean Feta Dip is a quick, flavorful dish combining creamy feta, fresh tomatoes, cucumber, and herbs, perfect as an appetizer or salad topping.


Ingredients

6 oz crumbled feta cheese (approx. 1.5 cups)

2 cups chopped tomato

1 cup chopped English cucumber

½ cup chopped green onion

34 TBSP quality olive oil or avocado oil

1 TBSP lemon juice

½ tsp dried basil

¼ tsp garlic powder

¼ tsp salt

¼ tsp black pepper

⅛ tsp dried dill

⅛ tsp dried oregano leaves


Instructions

  1. Chop the tomatoes, cucumber, and green onions.
  2. If using a block of feta, crumble it into small pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, basil, garlic powder, salt, pepper, dill, and oregano.
  4. Combine crumbled feta and chopped vegetables in a large bowl.
  5. Pour the dressing over the mixture and gently toss to combine.
  6. Serve immediately with pita chips, crackers, or as a salad topping.

  • Swap feta for goat cheese for a tangier flavor.
