Ingredients

Dough

Frying

  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar

Instructions

  1. Prepare the dough: In a large bowl, sift together the all-purpose flour, baking powder, and salt. Cut in the shortening until the mixture forms coarse crumbs. Gradually stir in the warm water just until the dough pulls together, avoiding overmixing.
  2. Shape the dough: Divide the dough into 5 equal pieces. On a lightly floured surface, roll each piece into an 8-inch diameter circle. Cut each circle into 4 wedges to create individual sopaipillas.
  3. Heat oil and fry: Heat the canola oil in a deep frying pan over medium-high heat. Carefully add a few tortilla wedges at a time into the hot oil. As they fry, the wedges will puff up. Flip them once to ensure even puffing on both sides, then turn them again to brown both sides evenly.
  4. Drain and coat: Remove the fried sopaipillas from oil and drain on paper towels. While still warm, coat each piece with the cinnamon-sugar mixture for extra flavor.
  5. Serve: Serve the warm sopaipillas with honey drizzled over the top for a classic sweet finish.
