Description

A classic meat pie recipe featuring tender ground beef cooked with onions, garlic, and thyme, encased in a golden, flaky shortcrust pastry. Perfectly baked until crispy and golden, this comforting dish is ideal for a hearty meal or festival treat.

Ingredients

Pastry

  • 2 cups shortcrust pastry

Filling

  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 tsp dried thyme

Egg Wash

  • 1 egg (beaten)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the pies at the correct temperature.
  2. Prepare Pastry: Roll out the shortcrust pastry on a floured surface to about 1/4 inch thickness. Cut out circles large enough to line the base of your pie tins adequately.
  3. Cook Filling: Heat a skillet over medium heat and sauté the finely chopped onions and minced garlic until soft and tender. Add the lean ground beef and cook until browned throughout. Pour in the beef broth and sprinkle the dried thyme, then simmer until the mixture thickens and flavors meld.
  4. Assemble Pies: Line your pie tins with the prepared pastry circles. Spoon the meat mixture evenly into each pastry base. Place another pastry circle on top and use a fork to crimp the edges securely, sealing the pies well.
  5. Apply Egg Wash: Brush the top pastry surfaces with the beaten egg to give them a shiny, golden appearance after baking.
  6. Bake: Arrange the pies on a baking sheet and bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and fully cooked.

Notes

  • Ensure the beef mixture is thickened sufficiently before filling the pies to prevent sogginess.
  • You can substitute beef broth with vegetable broth for a lighter flavor.
  • Using lean ground beef reduces excess fat, making the pies less greasy.
  • If shortcrust pastry is not available, puff pastry can be used but will alter texture slightly.
  • Allow pies to cool for a few minutes after baking before serving to let the filling set.
