  • 12 mini sweet orange peppers (about 2-3 inches each, halved, seeds removed)
  • 24 fresh dill fronds


Instructions

  1. Prepare Cheese Mixture: In a small bowl, combine the Boursin cheese, grated Parmesan cheese, and finely chopped green onions. Mix thoroughly until smooth. If the mixture is too stiff to stir easily, add a splash of milk or water to loosen it slightly.
  2. Prep Peppers: Cut the tops off the mini sweet orange peppers, then halve them lengthwise. Remove all seeds and membranes carefully to create clean pepper halves.
  3. Arrange Peppers: Place the pepper halves cut-side up on a large serving platter, evenly spaced to allow for filling.
  4. Add Dill Toppers: Lay one fresh dill frond at the top end of each pepper half to represent the carrot’s leafy top.
  5. Stuff Peppers: Spoon the prepared cheese mixture into each pepper half, securing the dill frond in place as you fill.
