Description

Mini cucumber sandwiches are a refreshing appetizer combining creamy dill-flavored filling with crisp cucumber slices and savory everything bagel seasoning. Perfect for parties, tea gatherings, or light snacking.


Ingredients

4 ounces cream cheese, softened

2 tablespoons real mayonnaise

1 tablespoon minced fresh dill (plus additional for garnish)

1 tablespoon chopped chives

Salt and pepper to taste

6 slices whole wheat sandwich bread

1 English cucumber, sliced thin into 27 pieces

Everything bagel seasoning to taste


Instructions

  1. In a mixing bowl, combine the softened cream cheese, mayonnaise, dill, and chives. Season with salt and pepper to taste. Stir until smooth.
  2. (Optional) Reserve 1½ tablespoons of the mixture and place in a pastry bag with a large tip for garnishing. Set aside.
  3. Spread the remaining cream cheese mixture evenly onto each of the six slices of bread.
  4. Place 9 cucumber slices in a single layer on three of the bread slices. Sprinkle with everything bagel seasoning.
  5. Top with the remaining three bread slices to form sandwiches.
  6. Trim off the crusts and slice each sandwich diagonally into four rectangles to make 12 mini sandwiches.
  7. Arrange on a serving platter. Garnish with piped cream cheese and fresh dill if desired.
  8. Serve immediately or refrigerate until ready to serve.

Notes

  • Best served fresh, but can be stored for 2-3 hours in the refrigerator.
  • Garnish with dill just before serving for best presentation.
  • Whole wheat bread adds flavor, but other types can be substituted.
  • Everything bagel seasoning can be swapped with sesame or poppy seeds if needed.
  • Do not freeze, as cucumbers and bread will lose texture.
