Description
Mini cucumber sandwiches are a refreshing appetizer combining creamy dill-flavored filling with crisp cucumber slices and savory everything bagel seasoning. Perfect for parties, tea gatherings, or light snacking.
Ingredients
4 ounces cream cheese, softened
2 tablespoons real mayonnaise
1 tablespoon minced fresh dill (plus additional for garnish)
1 tablespoon chopped chives
Salt and pepper to taste
6 slices whole wheat sandwich bread
1 English cucumber, sliced thin into 27 pieces
Everything bagel seasoning to taste
Instructions
- In a mixing bowl, combine the softened cream cheese, mayonnaise, dill, and chives. Season with salt and pepper to taste. Stir until smooth.
- (Optional) Reserve 1½ tablespoons of the mixture and place in a pastry bag with a large tip for garnishing. Set aside.
- Spread the remaining cream cheese mixture evenly onto each of the six slices of bread.
- Place 9 cucumber slices in a single layer on three of the bread slices. Sprinkle with everything bagel seasoning.
- Top with the remaining three bread slices to form sandwiches.
- Trim off the crusts and slice each sandwich diagonally into four rectangles to make 12 mini sandwiches.
- Arrange on a serving platter. Garnish with piped cream cheese and fresh dill if desired.
- Serve immediately or refrigerate until ready to serve.
Notes
- Best served fresh, but can be stored for 2-3 hours in the refrigerator.
- Garnish with dill just before serving for best presentation.
- Whole wheat bread adds flavor, but other types can be substituted.
- Everything bagel seasoning can be swapped with sesame or poppy seeds if needed.
- Do not freeze, as cucumbers and bread will lose texture.
